Lunaria Sparkling Pinot Grigio Pet Nat Ancestral

The  Petillant Natural or "Pet-Nat" for short follows the Ancestral Method, and is bottled without added sugar or yeast. Fermentation is paused mid-way for bottling, allowing the fermentation process to finish in the bottle with no disgorgement or dosage. Sediment in the bottom of the bottle is normal and due to the minimal intervention style of wine-making.  

This Pet-Nat is so refreshing for 100 degree Texas heat! Off-dry with aromas of strawberry, ripe pear and apple. The Pet-Nat style brings a yeasty, funky flavor and  the bubbles are balanced and crisp.
